Dietary pilaf
Description
The dish is prepared without unnecessary complications. When on a diet, the main challenge is choosing a menu that doesn't negatively affect your figure, while also not harming your health (drinking only water isn't particularly beneficial either). Overall, I've read through numerous options for low-calorie dishes and created a small collection for myself, which includes this simple recipe for diet-friendly pilaf. Essentially, there's nothing extremely restrictive about it, and it's not made solely of vegetables (which is exactly why I like it), but at the same time, this dish is an excellent option for those who can't eat fatty or heavy foods. In the end, we get a delicious, light pilaf with diet-friendly meat and minimal calories—precisely what we were looking for. Now, I'm happy to share this secret with you. The ready dish can be served at the table.
Instructions

Step 1

First, we prepare the vegetables: slice the onion into half-rings and grate the carrot on a coarse grater. Heat olive oil in a frying pan and sauté the onion for a couple of minutes, then add the carrot and cook everything together for another 2-3 minutes.

Step 2

Now cut the chicken fillet into small pieces, about 2 centimeters in size. Place them in the frying pan with the carrots and onions, and fry for 10–15 minutes over low heat. After that, transfer the contents from the pan to the cauldron using a slotted spoon (this way we'll remove excess fat).

Step 3

Now you can slightly salt the meat with vegetables and season with spices, but personally, I prefer to use a minimum of both. Then add the minced garlic.

Step 4

Rinse the rice thoroughly under cold water, preferably several times, and place it in a cauldron. Spread it evenly across the surface and pour in water so that the liquid level is 1.5–2 centimeters above the rice. Place the cauldron in an oven preheated to 200 degrees and cook for 40 minutes. That's it—our pilaf is ready, and we can proceed to lunch.
