
Dietary Carrot Cake
Description
Homemade baked goods for tea. Since carrots are naturally sweet, you'll need very little sweetener. You can use sweetener tablets dissolved in a small amount of water, granulated erythritol, stevia syrup, etc. Don't forget to add a pinch of salt to the batter to enhance the dessert's sweetness. Be sure to chill the sponge cake before applying the frosting. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients. Peel the carrots and rinse them in water.

Break the chicken eggs into a deep container. You can use only egg whites if you prefer not to use yolks. Beat them with a pinch of salt at the highest speed of your mixer for about 3-4 minutes. Then dissolve the sweetener tablets in a small amount of water and add to the egg mixture. Alternatively, add powdered sweetener and stevia syrup. Gently mix.

Grate the vegetables on a grater with small holes. The cut should be fine, but not pureed.

Add the carrot slices to the egg mixture and mix.

Then gradually mix in the oat flour and baking powder. The dough should be sticky but not dense, similar in consistency to sponge cake or pancake batter.

Grease the baking pan with vegetable oil and place the carrot dough into it. Preheat the oven to 180 degrees and put the pan on the middle rack.

Bake the sponge cake for 40–50 minutes, reducing the temperature to 160 degrees after the cake has developed a golden crust. The cake should be completely baked through—check it with a wooden skewer. Let the baked sponge cake cool completely in the pan, then remove it from the pan.

Beat the sour cream with the thickener and sweetener until thick cream forms, for 3-5 minutes. This can be done with a regular whisk or using a mixer.

Cut the sponge cake into 2-3 layers. Place the bottom layer on a plate and spread one-third of the sour cream frosting over it.

Cover with the second cake layer and spread all the cream over the top and sides of the cake. Dry the top cake layer and crumble it in a food processor. Sprinkle the crumbs over the sides of the cake and decorate to your taste. Cut into pieces and serve.
