
Diet Aspic
Description
Let's make diet aspic at home. For this dish, chicken drumsticks or wings work best—they make a wonderful, rich broth. Always keep the finished aspic in the refrigerator so it doesn't lose its necessary "shape". Good luck. The appetizer is ready. Serve immediately.

Wash the chicken (drumsticks or wings), place it in a pot, and cover with water. Also add a washed onion in its skin, a bay leaf, and peppercorns. Bring the broth to a boil over medium heat, skimming off the foam. After 5 minutes, add salt and a whole, washed carrot. Reduce the heat to the lowest setting and continue simmering covered for another 1.5 hours.

After 15 minutes, once it has come to a boil, remove the carrots and slice them into rings, then cut each ring in half.

Add the gelatin to a glass of cold water. For 30 minutes.

Shred the boiled chicken into pieces and place in a wide container for aspic. Arrange carrot pieces on top. Push the garlic through a press and place on top.

Strain the broth and mix with the gelatin, return to the heat and let the gelatin dissolve completely. Pour the resulting liquid over the chicken, sprinkle with chopped parsley. Cool, then refrigerate the aspic for 10 hours until fully set.
