Prepare the ingredients.

Activate the starter. Since the bread will be yeast‑free, using a single starter, it needs to be as active as possible. For this, take 70 ml of water and add the sugar.

Add the wheat starter, add 1 tablespoon of wheat flour from the total amount.

Stir the starter so that there are no lumps, cover it with plastic wrap, and place it in a warm spot for about 3 hours, until the starter begins to “work”.

A bubble cap has appeared on the pre-ferment; you can place the dough on the bread.

Pour 230 ml of water into the mixing bowl, add the starter, flax seeds, salt, and stir.

Add three types of flour: rye, oat, wheat.

Knead the dough using the “hook” attachment; the dough should not be too thick, it should be like that, it’s “lighter for rising”.

Place the dough to rise in a warm place for 6–8 hours; during fermentation, perform a fold‑and‑stretch kneading 2–3 times.

Grease the bread baking pan with a small amount of vegetable oil, place the dough in it, and let it proof for 1 hour.

Bake the bread at 240 degrees for 10 minutes, then lower the temperature to 180‑200 degrees and bake for another 45‑50 minutes. Remove the hot bread from the pan and place it on a rack to cool completely.
