Dietary dessert made with kefir

Description

The baking is simple and quick. I find it very hard to live without sweets—my hand constantly reaches for cookies, cakes, or candies. That's why I prepare these muffins using kefir as a base, with the addition of oat flakes, cocoa, and bananas. The finished baked goods are low-calorie and diet-friendly, yet delicious and aromatic (thanks to the cocoa). If you pour the batter into one large baking pan instead of individual muffin molds, you'll get a fantastic cake. Serve it cooled or slightly warm.

    1. In a bowl, mix the oat flakes, baking soda, and salt, then add the eggs and banana pieces, mash the mixture with a fork or a mashing tool.

    2. Add a heaping teaspoon of regular cocoa powder, which gives a rich flavor and pleasant chocolate color.

    3. Add coconut flakes, which provide aroma and also serve as a decent substitute for sugar.

    4. Finally, I pour in the kefir (I use 2%). If you add a little less, the muffins will be somewhat dry, but I prefer moist baked goods.

    5. I grease special silicone cupcake molds with sunflower oil so that the baked goods easily release from the sides.

    6. Fill each one with the batter, but not completely, as the cupcakes will rise slightly during baking.

    7. Place in a preheated oven at 180 degrees for 30 minutes, then remove the cupcakes and let them cool completely.
