It's more convenient to mix muffin batter directly in the blender jar. Alternatively, you can combine the ingredients in a bowl using your hands and a whisk. Place cottage cheese, honey, kefir, and egg into the blender jar.

Beat all ingredients until smooth. Add flour, baking powder, and lemon zest.

Fill the molds with the prepared batter almost to the top. The batter will rise very little during baking. Bake the muffins in the oven at 180 degrees for about 20–30 minutes. The top should brown well and become firm.
