
Dietary pancakes
Description
These pancakes are perfect served with salmon, cottage cheese and herbs filling, or other low-calorie fillings, as well as with honey or jam. You can make small pancakes, more like pancakes, or classic thin crepes. Buckwheat pancakes can be served for breakfast or at a buffet, either warm or chilled. Perfect with tea.

Step 1
Pour warm water into a bowl and dissolve yeast and sugar in it. Transfer everything to warm milk and mix, let stand for 5 minutes.

Sift the flour into a separate bowl, add salt. Add the dry ingredients to the milk with yeast, then add buttermilk, vegetable oil, and egg yolks, and mix. Cover the bowl with plastic wrap and let it stand for 1 hour in a warm place.

Separately beat the egg whites until a fluffy foam forms, gently mix them into the dough, cover again with plastic wrap, and let it rest for another half hour.

Grease the pan with vegetable oil and pour in a small amount of batter, adjusting to your desired thickness. Fry on both sides until golden brown.

Transfer the pancakes to a plate and cover with a towel, then serve warm.
