1. For the dough, mix softened butter with cottage cheese and thoroughly blend until smooth. Gradually add flour sifted with baking powder in small portions. Knead a soft dough, shape it into a ball and refrigerate for at least 1 hour (or overnight). Meanwhile, prepare the sugar, adding lemon or orange zest for flavor.

2. When the dough has set well, roll it out quite thinly on the work surface. Using cutters or a regular glass, cut out small circles.

3. Dip one side of the cookie into sugar and place it sugar-side up on the table. Use homemade lemon curd as the filling. Carefully fold in half. Dip into sugar again and fold once more.

4. As a result, you'll get small cookies like these. Place them on a baking sheet lined with parchment paper. Preheat the oven to 180 degrees and bake for about 20-25 minutes.
