Step 1

1. First, it is necessary to combine the sugar with dry milk and mix thoroughly until uniform. Add a pinch of vanillin, although it is best to use natural vanilla from a vanilla pod in the recipe for children's ice cream.

Step 2

2. Pour a small amount of milk (about 50 milliliters) into a glass and add starch. Mix thoroughly to prevent lumps from forming.

Step 3

3. Gradually pour the remaining milk into the mixture of sugar and dry milk. Constantly whisking, make the mixture smooth and homogeneous.

Step 4

4. Place the milk over heat and warm it, stirring constantly. Pour in the dissolved starch and cook over low heat until the mixture thickens. The milk should not burn or boil.

Step 5

5. Straining the dairy base will help avoid lumps and make the baby ice cream light and creamy. After straining, cool it thoroughly. To save time, you can place the mixture directly into a bowl with ice water, then transfer it to the refrigerator.

6. Whip the cold cream separately.

Step 7

7. Combine the milk mixture and cream, gently stir, and transfer to an ice cream maker or a plastic container. In the latter case, you will need to beat the mixture every 15 minutes during the first hour, then every 25–35 minutes for another hour and a half.
