Step 1

1. Pour instant gelatin into a bowl and add 100 ml of boiled cooled water. Stir until smooth and let it sit for 10–15 minutes to bloom. After this time, transfer the bloomed gelatin into a small saucepan or any suitable container. Heat gently until the gelatin is completely dissolved. Strain the mixture through a fine sieve into a bowl and let it cool slightly.

Step 2

2. To prepare the sugar syrup, put the sugar into a saucepan, add 30 ml of boiled water (2 tablespoons), and heat over medium heat, stirring, until the sugar is completely dissolved. This process will take no more than 3–4 minutes.

Step 3

3. Place the sour cream into a deep bowl, add the vanilla sugar, and pour in the hot sugar syrup. Constantly whisking with a whisk, gradually add the slightly cooled gelatin. Continue beating until a smooth, uniform consistency is achieved.

Step 4

4. Pour the prepared mixture into ramekins or any other molds. Cover them with plastic wrap and refrigerate until the jelly is completely set, for 3–4 hours (or overnight).

Step 5

5. After the jelly has set, take it out of the refrigerator and remove it from the molds. To do this, pour boiling water into a deep container and dip the molds with jelly into it one at a time for about 30 to 40 seconds, making sure the water does not get inside.

Step 6

6. Remove the jelly mold from the bowl of boiling water and, covering it with a plate so that the mold is in the center, immediately invert it upside down, holding the plate with your hand. Remove the mold.
