Step 1

1. Gently heat the brandy over low heat, but do not bring to a boil. Remove from heat and place the prunes into it. Let soak overnight (8-10 hours).

Step 2

2. Remove the prunes from the brandy, remove the pits, and cut them into pieces of arbitrary size.
- 3
Step 3

3. In another small saucepan, sprinkle the chopped apple with water (2 tablespoons will be enough).
- 4
Step 4

4. Remove the vanilla seeds from the pod and mix them with 2 tablespoons of sugar. Add the mixture to the apples, bring to a boil, cover with a lid, and cook for 5–7 minutes, stirring, until the mixture becomes soft. Remove the saucepan from the heat, let it cool, and mash with a fork into a smooth puree.

Step 5

5. In another small saucepan, moisten half a cup of sugar with the remaining water, place over heat, and heat while stirring until the sugar dissolves. When the syrup becomes clear, add the butter, mix well, increase the heat, and cook until it turns caramel-colored, without stirring.

Step 6

6. Remove from heat, let cool for 5 minutes, then add cream to the caramel. Cool the mixture to room temperature and beat together with the apple puree. Place the resulting cream in the refrigerator.

Step 7

7. Distribute the "drunken" prunes into tall glasses. On top of the prunes, layer half of the yogurt, then all of the cold apple mixture, and finally the remaining yogurt. Serve immediately.
