
Carrot Dessert
Description
The recipe won't take much time. This carrot dessert comes from Turkish cuisine and is called "Jezeri". It doesn't cook quickly, but it's very simple—every step is described below. You decide which nuts or spices to add and what shape to give the dessert. You can chill it as a large slab and then cut it into squares or diamonds; the shape can be whatever you prefer. Serve chilled.

Prepare the ingredients for the dessert.

Grate the carrots on a fine grater, measure out three cups, place in a heavy-bottomed pot and simmer for 2 hours, adding water as it evaporates, stirring occasionally.

Chop the walnuts, but not too finely; you can do this right in a bag using a rolling pin.

Remove the zest from the lemon and squeeze the lemon juice.

After 2 hours, add sugar, cardamom, vanilla extract, and continue cooking until the carrots caramelize and turn into a sticky paste.
