Description

The dish is prepared without unnecessary complications. This blackcurrant dessert is our family's absolute favorite. In July, when it's both blackcurrant season and hot weather, this cold blackcurrant dessert is simply perfect. Slightly tart, but very, very delicious. The finished dessert can now be served.

    This exquisite dessert is very simple to prepare. First, place the black currants rubbed with sugar in a saucepan over the lowest heat, allowing them to soften slightly. Then, start beating the egg whites in a blender, and gradually, in a thin stream while continuing to beat, pour in the boiling black currants.

    In another bowl, beat the cream, liqueur, and sugar. Then combine the contents of the two bowls—the egg white mixture and the cream mixture. Mix them, but this time by hand using a regular spoon, not a blender.

    Take a special freezing mold (see photo for appearance), and place the resulting mixture into the molds. Optionally, you can add a few currant berries into each mold. Put the mold into the freezer for 4–5 hours to freeze.

    Before serving, prepare the sauce. To do this, blend the frozen blackcurrants in a blender, adding a little lemon juice and water.
