Step 1

In addition to the ingredients, you will also need colored paper—regular or crepe paper—as well as toothpicks. These items will help enhance the cherry-like appearance. Let's get started! To color the waffles red, I'll be using beet juice, but if you have blueberries, that would work even better.

Step 2

Cut the colored paper into strips and unwrap the toothpicks. Wrap the paper around each toothpick, securing the edge by tightly twisting the paper around the toothpick. Cut out leaf shapes and attach them to the top of the sticks by twisting or gluing.

Step 3

Break the wafers into pieces, place them in a blender container, and grind until smooth. It's best to use plain wafers, but I could only find these ones with coffee filling, and they turned out fine as well.

Step 4

Pour the cream into the wafer crumbs, add one tablespoon of sour cream, and start kneading the dough. If the mixture is too dry, add a little more sour cream. However, the "wafer dough" should not be too moist, so that it holds its shape!

Step 5

This is how dense and elastic the kolobok turns out.
- 6
Step 6

Using a scale, pinch off pieces weighing 9 grams each and roll them into identical balls.
- 7
Step 7

Peel the beetroot, wash it, and squeeze out the juice. Prepare sugar for coating. Dip each ball into the juice, then roll it in sugar.
- 8
Step 8

Place the finished cherries on a paper towel and let them sit for a moment so the towel can absorb excess juice. Insert a toothpick with a leaf into each cherry. The "Countess Cherries" dessert is ready!
