1. Melt the milk chocolate in a double boiler.

2. In a separate container, mix the egg yolk, sugar, and liqueur, add honey and bring the syrup to a boil.

3. Melt the white chocolate in a double boiler, then add the gelatin. Pour the resulting ganache into a mold and refrigerate for 1 hour.

4. Add the egg white and syrup. Beat with a mixer. When the mixture has cooled slightly, pour it into the mold over the slightly cooled milk chocolate and leave for 2–3 hours. Meanwhile, whip the cream into a firm foam.

5. Using a pastry bag, pipe a butterfly wing shape onto parchment paper using milk chocolate.

6. Add a little yellow food coloring to the white chocolate. Fill a pastry bag with the white chocolate.

7. Print one wing of the butterfly in half to fill it with white cream.

8. Once the dessert has set, carefully remove it from the mold and flip it over so the white chocolate side is facing down, placing it onto a serving plate. On top of the milk chocolate, add a dollop of whipped cream and place a chocolate butterfly on top.
