Description

The popular dessert was created in honor of the ballerina Anna Pavlova and resembles a ballerina's white, airy tutu. The dessert consists of a crisp meringue with a soft, tender center and the smoothest creamy filling. It is decorated with fresh strawberries and other berries and served immediately after being garnished with cream.

    Prepare the listed ingredients. Chill the egg whites in advance, as they will whip better. Make sure no trace of yolk gets into the egg whites when separating the eggs!

    Transfer the chicken egg whites into the bowl of a mixer or food processor. The bowl and whisk must be completely dry, as even a few drops of water will prevent the egg whites from whipping. Beat them with salt for 2–3 minutes at the highest speed until fluffy and foamy. Then gradually add the powdered sugar in portions, continuing to beat for another 2–3 minutes.

    Finally, mix in the starch and lemon juice. The starch will give the meringue a tender center, while the lemon juice will enhance the sweetness of the base. Place the whipped mixture onto parchment paper in the shape of a dome or a wide circle, and dry in the oven for 1.5 hours at 100–110 degrees. Be sure to use the convection setting. Let the base cool completely.

    Next, beat 33% cream for 3-4 minutes until it forms a cream, gradually adding powdered sugar in portions. The peaks of the cream should hold on the whisk. Mix in the lemon juice, and the whipped cream is ready!

    Using a pastry bag, pipe the prepared cream onto the meringue base, creating patterns as desired. Alternatively, you can simply use a whisk or fork to create the patterns.
