
Potato pancakes with meat
Description
The recipe won't take much time. Everyone loves potato pancakes with meat. The smaller they are, the faster they'll cook. Use any meat you like—pork and beef mixture works best. If desired, you can add chopped herbs—parsley, green onion, or dill—to the potato mixture. Serve hot.

1. Wash and peel the potatoes. Then grate them on a grater or in a food processor.

2. Place the grated potatoes in a sieve over a bowl. Squeeze with your hands. After the liquid sits for a while, you will see starch settled at the bottom of the bowl. Pour off the liquid, then mix the starch with the grated potatoes.

3. Peel one onion and grate it on a grater as well. Add egg, salt, pepper, flour, and sour cream to the potatoes, and mix thoroughly.

4. Pour a few tablespoons of oil into a heavy skillet and heat over medium heat. Use a spoon to shape and flatten four potato pancakes. Mix the meat filling with finely chopped onion, salt, and pepper. Place a spoonful of the meat filling onto each pancake in the skillet.

5. Place another spoonful of grated potato on the meat and flatten it. Flip over. Fry the potato pancakes with meat until golden brown, about 6-7 minutes on each side.
