
Pumpkin pancakes
Description
Since pumpkin is very vitamin-rich and healthy, I decided to use it to make pancakes. If you, like me, don't feel like spending too much time in the kitchen, I suggest baking these pancakes in the oven. Serve them hot, either alongside vegetables or as a standalone dish. These vegetable pancakes make a great breakfast or a healthy dinner.

Step 1

1. Peel the pumpkin and grate finely, chop the herbs. Mix the pumpkin, herbs, feta, garlic cloves pressed through a garlic press, eggs, flour, salt, ground black pepper, and chili flakes.

2. Shape small pancakes by hand, place them on a baking sheet lined with parchment paper, and put in the oven.

3. Bake in a preheated oven at 180 degrees for 15-25 minutes.

4. Transfer the ready potato pancakes to a plate and enjoy!
