Rustic pizza

Description

The recipe won’t take much time. I don’t know what a pizza like this is called in Italy, or whether Italians make anything similar at all, but at one Moscow pizzeria where I often have lunch they call it country-style pizza. The name probably comes from how simple the ingredients are—nothing gourmet, just cottage cheese, herbs, and chicken. And that’s the pizza you get—very simple, but filling and tasty.

    First we will prepare the dough. In a bowl, mix half a cup of warm milk, a tablespoon of flour, a tablespoon of sugar, and yeast. Leave for 10 minutes in a warm place.

    Sift the flour into a bowl, then add the remaining warm milk, melted butter, salt, sugar, and the starter prepared in the first step. Knead the dough, leave it in a warm place for 1 hour, then give it a brief knead and leave it for another 30–40 minutes.

    Divide the resulting dough into 2 parts; roll each piece into a flatbread about 1 cm thick and about 28 cm in diameter. Spread a layer of cottage cheese mixed with finely chopped herbs over the dough.

    Shred the boiled chicken breast into fibers and spread it evenly over the pizza.

    Sprinkle the whole thing on top with coarsely grated cheese.

    Bake for 20–25 minutes at 200°C (until done). Serve hot. :)
