Description
A delicious appetizer for any gathering. Any homemaker can prepare this delicacy—it’s very easy, inexpensive, and tasty! The main thing is to wash the skins thoroughly, clean them with a knife, and be sure to cut away the veterinary inspection stamps; boil them in spices and stack them. Place the roll under a weight for several hours, or better yet, overnight. I used a large, heavy cast-iron skillet as the weight. So, watch and I’ll tell you: serve with herbs and sauce.

1. Wash the pig skin thoroughly and clean it with a knife. Prepare the spices.

2. Place the skin in a pot, cover with clean cold water, and add all the spices and soy sauce at once. Salt to taste; the brine should be slightly oversalted. Simmer over low heat for about an hour.

3. Done! You can check doneness with a fork—if the fork goes in easily, it's ready.

4. Line the mold where you plan to lay out the skins with plastic wrap. Layer the hot skins on top of each other; you can additionally sprinkle the layers with ground pepper, red or black, to taste. Place a weight on top, at least 2–3 kg, and refrigerate overnight.
