
Ladies' Salo
Description
Suitable for both holidays and everyday meals. This appetizing dish is served chilled. You can take it with you on a trip or to a picnic, but wrap it in parchment paper rather than a plastic bag or cling film, otherwise the salo will "steam." Don't forget to serve it with bread when presenting the dish. Serve with herbs and sauce.

Prepare the listed ingredients.

Put all the spices and seasonings into the food processor bowl. You won’t get them ground this finely with a blender or in a mortar!

Process for about 2–3 minutes and do not open the lid until the spice dust has settled inside!

Rinse the fatback in water, scrape off the skin with a knife, pat dry with paper towels, and cut into serving-sized pieces.

Rub each piece of fatback on all sides with a mixture of spices and seasonings. Place in a container or bag and refrigerate for at least 3 days, up to 2 weeks. After 2 weeks, it's better to freeze the fatback.

When serving, slice the damskoye salo into very thin slices and arrange on a plate.
