Description

Baking is prepared simply and quickly. If you have cooked dishes that used only yolks and you have leftover egg whites that you don’t know where to “fit,” bake an exquisite French dessert “dacquoise,” which contains not a gram of flour; instead it uses nuts—almonds or hazelnuts. It turns out impressive and very tasty, and the step‑by‑step recipe explains how to make it. Serve it cooled or slightly warm.

Instructions

  1. 1

    Step 1

    Step 1

    Prepare the ingredients.

  2. 2

    Step 2

    Step 2

Spread the hazelnuts on foil or parchment paper, preheat the oven to 150 °C, and bake the nuts for 10 minutes.

  3. 3

    Step 3

    Step 3

Pour the still‑hot nuts onto a waffle cloth, gather the edges of the cloth into a knot and rub the nuts together to remove the husk. If the nuts are 70 % cleaned, that’s already normal.

  4. 4

    Step 4

    Step 4

Place the nuts in a blender and grind them into crumbs; try to ensure the nuts don’t clump together or release oil. You need fine crumbs, almost like flour.

    Step 5

    Step 5

Place 135 g of nuts in a blender and grind them into crumbs; try to keep the nuts from forming a lump or releasing oil—you need fine crumbs, almost like flour.

  6. 6

    Step 6

    Step 6

Add 100 grams of powdered sugar to the nuts and mix.

  7. 7

    Step 7

    Step 7

Sift the mixture of nuts and powdered sugar into a bowl for kneading the dough.

  8. 8

    Step 8

    Step 8

Separate the whites of 5 eggs and beat them with sugar until foamy.

  9. 9

    Step 9

    Step 9

Add the nut mixture to the egg whites.

  10. 10

    Step 10

    Step 10

Gently knead the nut dough, trying to preserve the airy structure of the proteins.

  11. 11

    Step 11

    Step 11

Line a baking sheet with parchment paper, draw the outlines of your pastry on it, I had four circles the size of a tea saucer. Transfer the dough to a pastry bag with a 12 mm tip and pipe the dough along the applied stencil in a zigzag. Bake for 35 minutes at 170 degrees.

  12. 12

    Step 12

    Step 12

While the dacquoise is baking, prepare a mixture of 80 g of nuts, ground into a not‑too‑fine crumb, and 50 g of powdered sugar.

  13. 13

    Step 13

    Step 13

Sprinkle the baked layers with a mixture of powdered sugar and nuts. At this point you can consider the dacquoise ready. Carefully remove the layers from the sheet. If you don't plan to use them immediately, you can wrap them in plastic wrap.

    Step 14

    Step 14

If you decide to make a dessert based on “дакуаза”, garnish it with whipped cream or any other cream, fruits, and berries.

Place the second layer on top and repeat the decoration, sprinkle the nut mixture on top. The result is an extraordinarily tasty and delicate dessert.
