Dakos

Description

This recipe won't take much time. On Crete, where I vacationed, dakos is served in every tavern. In the summer heat, when you don't want to eat anything heavy, dakos makes a wonderful alternative to a full lunch. And if you serve a glass of dry white wine with such an appetizer—that's a real celebration :) Unfortunately, it's impossible to reproduce dakos exactly due to the lack of the necessary ingredients (you need a special cheese that we don't have here), but you may be able to make something similar. Good luck. Serve the appetizer at the table.

    We begin preparing the dish by lightly moistening the barley croutons with plain water. The croutons should soften slightly and puff up.

    Then drizzle the croutons with olive oil. Not too generously—the croutons shouldn’t be swimming in olive oil; they should just absorb a little of it.

    Peel the tomatoes, cut them in half, and grate on a coarse grater.

    Spread the tomato purée over the moistened croutons.

    On the layer of tomatoes, spread fresh soft sheep’s cheese, top it with a couple of olives, and sprinkle everything with oregano.

    Once more, drizzle olive oil over everything on top. Dakos is ready!
