
Dagestani apricot porridge
Description
The color and cooking time depend entirely on the apricots you use. Adjust the sugar to your taste, and any type of urbech will work. You can replace the vegetable oil with butter, but then the dish cannot be served during fasting.

Prepare all the necessary ingredients.

Wash the dried apricots, place them in a heavy-bottomed pot and pour in water. Put on medium heat, bring to a boil and simmer over low heat. Cook until the apricots are soft, about 25–30 minutes.

Remove the pot from the heat and blend everything into a homogeneous mass.

Add sugar to the puree, mix well.

Sift the flour into the saucepan with the puree and mix thoroughly until smooth.

Place the saucepan over low heat and cook, stirring for 10 minutes, then remove from heat. The apricot puree should thicken.
