
Chicken baked in pumpkin
Description
It's best to bake the pumpkin in the oven rather than boiling it. The pumpkin makes an excellent baking container. The dish turns out filling, delicious, and healthy.

Step 1

1. Rinse the pumpkin thoroughly. Measure 5 centimeters down from the stem, then carefully cut out a circular opening. You can cut the edge of the circle into jagged teeth if desired. Remove the top and use a tablespoon to scrape out the seeds and some of the flesh, leaving about a 1.5-centimeter layer of flesh on the pumpkin's walls.

2. Rinse the rice with warm water. Then cook it in salted water. Bring to a boil over high heat, then reduce the heat and simmer for about 5 minutes. Drain the water and transfer the rice to a bowl. Slice the leek into rings and sauté in vegetable oil for about 1 minute. Cut the apricots into thick strips. Add the apricots and leek to the rice, then mix well.

3. Wash and dry the chicken. Cut it into 8 pieces. Heat half of the butter in a frying pan. Fry the chicken for 4 minutes on each side.

4. Layer the prepared pumpkin alternately with rice, leek, and dried apricots. Then add the pieces of chicken. Pour over the oil in which the chicken was fried. Cover with the cut-off top and secure with toothpicks.

5. Melt the remaining butter and use it to grease the pumpkin. Bake in the oven at 180 degrees for 2 hours.
