
Chicken tapaka (or tabaka)

We will carefully clean the chicken or a small broiler, wash it, and dry it.

And cut the bird down the center of the breast. Check to make sure there are no organs left inside the bird.

Turn the flattened chicken over and pound it.

We will need a heavy-duty cast-iron skillet with a special weight. If you don't have one, don't worry. Use a regular cast-iron skillet, and instead of the weight, place a flat plate and a can of water on top.

Mix the spices with salt and rub the mixture all over the bird. Add thin slices of garlic. Place butter on the skillet. You can use a mixture of butter and vegetable oil.

Place the chicken on the skillet, pour lemon juice over it, and add a piece of butter.

Press down with a lid-weight.

And let it marinate for at least an hour. Then place over the highest heat for 5 minutes, then cook over slightly above medium heat for about 15 minutes, until you hear the chicken beginning to fry.

Flip the bird to the other side and cook under a weight for another 10-15 minutes.

Place on a plate, sprinkle with herbs, and serve. Can be served with adjika or sauce.
