
Chicken tabaka
Description
The dish is prepared without unnecessary complications. You can order chicken tabaka at any cafe or restaurant, or buy it at a supermarket. But nothing will taste better than the chicken you prepare yourself. Since this is a Georgian dish, it pairs perfectly with tkemali sauce or a spicy tomato sauce. The chicken is so juicy that it can be served without sauce alongside any side dish. The dish is ready to be served.

Wash the chicken and pat it dry with paper towels, then make a cut along the breastbone with a sharp knife and open up the bird.

Rub the chicken on both sides with olive oil and season well with salt.

Pour vegetable oil into a large saucepan and heat thoroughly. Place the chicken breast-side down and sprinkle with a teaspoon of hot red pepper. Press down with something heavy and fry the chicken.

Sear the bird on both sides until cooked through, pressing with a press each time you flip it.

Place the cooked chicken on a plate. Do not discard the oil, you will use it to make the sauce.

Peel the garlic and place it in a mortar, add coriander and crush, then add a teaspoon of hot pepper.

Pour in the boiled water and mix, then pour the prepared mixture into the pan where you fried the chicken.

Stir and bring to a boil, then cook for 2-3 minutes. Transfer the prepared sauce to a bowl.
