You can use any parts of the chicken, but it's better to choose bone-in pieces rather than pre-cut fillet. Adjust the spiciness to your taste, and if children will be eating it, simply omit the pepper altogether. Overall, it results in a typical Mexican flavor combination—very tasty and slightly unusual.

Prepare all the ingredients.

Cut the chicken into pieces and fry with salt and spices on all sides until golden brown on top. It's best to use a thick-bottomed pot; I use a cauldron.

Transfer the cooked chicken to a plate for now, and in the same oil, sauté the onion cut into cubes until soft.
