
Chicken chilindron
Description
There are many chicken recipes, many of them similar, some with their own unique features depending on the region. In Spain, chicken is also prepared in various ways. In our case, due to the lack of specific ingredients, we had to slightly modify the recipe. To prepare chicken chilindron, it's not necessary to use only young chicken. You can use wings or legs as well. I'm used to cooking it with thighs or quartered pieces. See the recipe below.

Prepare the ingredients.

Wash and chop the red pepper and onion. Blanch the tomatoes and remove the skin.

First, sauté the chicken in oil for a short time until it browns.

Set the chicken aside. In the same skillet, sauté the pepper and onion for a couple of minutes over high heat.

Finely chop the garlic and chili pepper. Sauté them as well. Add a little red wine. This is optional, but it won't hurt if you have some at home. Cook briefly, then set aside.

Now add the tomatoes there as well. Simmer everything.

Now return the chicken to the skillet, add bacon (Spanish hamon, or at worst case - prosciutto).

Now add the finely chopped herbs, thyme, rosemary, and bay leaf. Cover with a lid and simmer for about 30-40 minutes. This is our chicken chilindron ready. Serve it with a side dish or without, as you prefer.
