Tsibriki
Description
A tasty appetizer for any gathering. If you like, you can add your favorite spices and aromatic herbs to the classic tsybryky recipe, plus a little onion, for example. These balls work well as a side dish and as a hearty, tasty snack. Serve them with sour cream or tomato sauce. They can be served warm or chilled.
Instructions

Step 1

1. First, wash and peel the potatoes. Grate them or chop them in a food processor, for example. Place in a colander.
- 2
Step 2

2. Place a small bowl underneath to catch the draining water. Add salt and pepper to taste, and spices if you like. Add the flour and mix everything thoroughly. You can also use a little starch in the tsybury recipe.

Step 3

3. The mixture should become firm enough and easy to shape. It’s also important not to overdo the flour, so add it gradually. When the base is ready, you can start shaping. I recommend shaping all the balls at once, since they fry fairly quickly. Roll small balls and coat them on all sides with flour.

Step 4

4. Heat vegetable oil in a skillet and add the balls in small batches. Fry the tsybricks at home until golden brown on all sides. Then place them on a paper towel to remove excess oil.

Step 5

5. This is the kind of appetizing, tasty, and easy tsybyriki you’ll end up with. Serve them with vegetables, meat, or sauce.
