
Colorful marshmallows
Description
The recipe won't take much time. For those sweet-toothed people who love sweets but worry about their figure—this is the perfect dessert. Because these are tiny marshmallows made from natural ingredients, literally "one bite" size. You can choose your coloring ingredient—bright berries or natural food dyes. The basic step-by-step recipe will help you make them. This amount of ingredients yields approximately 70 small marshmallows. Serve chilled.

Prepare the ingredients.

Remove the cores from the apples and place them in a baking dish. Bake in the oven at 180 degrees for 20-25 minutes.

Place the blueberries in a saucepan and heat until softened.

With a spoon, remove the baked apple pulp.

Blend the apple pulp into a puree. Measure out 150 grams of the puree.

Rub the blackberries through a sieve to make a purée. You will need approximately 25 grams or 1 tablespoon of berry purée.

Beat the egg whites into a soft foam. Add 150 grams of sugar and continue beating until stiff peaks form, then mix in the apple puree and beat until fluffy.

Place 300 grams of sugar, agar-agar, and water into a saucepan, then heat.

Boil the syrup, cook for about 5-6 minutes from the moment it starts boiling, until it reaches 118°C. If you don't have a special thermometer, cook until it reaches the "thread" stage. Remove the syrup from heat.

Thinly pour the syrup into the whipped egg white-apple puree, continuing to beat until a firm, dense meringue mass forms. Set aside approximately one-third of the white mass. Divide the remaining mass, placing one-third into each of two bowls.

Add the blueberry puree to 1/3 of the whipped white mass and beat.

Add a food coloring of any color (I used lavender) in the amount of the tip of a toothpick to the remaining 1/3 of the white mixture. Beat until the color is uniform.

Pipe the blueberry marshmallow in small swirls (approximately 4 cm in diameter) onto parchment paper.

Place two small piping bags — one with white mixture and the second with colored (lavender) mixture — together into one large piping bag. Pipe small two-tone marshmallows onto parchment paper. Let the marshmallows dry for 6–8 hours.

Roll the stabilized (dried) marshmallows in powdered sugar. You can pair them up in any combination, or leave them as they are. These tasty, naturally colored marshmallows will definitely attract attention!
