
Colored Boiled Eggs for Easter
Description
The recipe won't take much time. This method gives you plenty of room for creativity: by preparing natural vegetable broths or juices from "colorful" vegetables and herbs (and by mixing them as well), you'll get a wide range of beautifully dyed peeled Easter eggs. It can be served warm or chilled.

1. Wash the beets, peel them, and cut into small pieces. Place in cold water, bring to a boil, and simmer for 20 minutes over low heat.

2. Wash the eggs and hard-boil them.

3. Strain the beet broth through a sieve lined with cheesecloth and let the broth cool. Place the shelled eggs in the beet broth and refrigerate for 24 hours.

5. Serve the colored eggs at the table, sliced or whole, sprinkled with salt and pepper and, if desired, garnished with fresh herbs.
