
Colorful dumplings
Description
The recipe won't take much time. Making colorful dough at home is actually quite easy. You can, of course, use ready-made food colorings, but I'd like to suggest using only natural ingredients: tomato juice, turmeric, spinach, etc. These dumplings can be safely served to children, and even adults are unlikely to refuse them. Serve hot.

Prepare all the ingredients.

For the green dough, we will need greens. Spinach is ideal, but I'm using a mix of parsley, dill, and a little spinach. Mine is frozen; if using fresh greens, chop them finely with a knife—about 7-8 tablespoons. Pour 1 cup of water over the greens, place on the stove, and boil for 15 minutes.

Then strain the herbs through a sieve and pour the required amount of liquid into a glass.

For yellow color, dissolve turmeric in water. For red color, mix tomato paste in water. Use the amount of water needed for each type of dough based on the amount of filling. I measured 80 ml of water for each type of dough.

I kneaded the dough separately. Each time, I poured colored water into a deep bowl, added a pinch of salt and one spoon of vegetable oil. Then I gradually added flour in portions until the dough stopped sticking to my hands and became elastic. As a result, you should have three types of dough: red, yellow, and green. Cover the dough with a clean towel and let it rest for 20 minutes.

Colorful dumplings can be made with any filling. To prepare the meat filling, grind the meat through a meat grinder—you can use two or three types of meat together. Add finely diced onion, chopped herbs, pressed garlic, salt, and pepper to taste. Then mix everything well.

Cut off a piece from each type of dough in turn and roll it into a sausage. Cut the sausage into small pieces.

Roll out each piece into a circle and place the filling in the center.

Then pinch the edges and shape the dumplings into the traditional or any signature form. Make all the dumplings this way. You can freeze them for later or cook them immediately. To cook, boil the dumplings in salted boiling water for about 3 minutes after they float to the surface.

Serve the finished colorful dumplings the same way as traditional ones—with sour cream, butter, or any sauce. In taste, they are no different from their ordinary white counterparts, but visually they are undoubtedly more vibrant and delight not only the stomach but also the eyes!
