
Colorful vegetable pie

I didn’t invent the recipe for this colorful vegetable pie myself; recently I was given a very good book with classic European cuisine recipes, and among the huge number of recipes was this one. I tried baking it once and really liked it, and since then this colorful vegetable pie has been a regular on our table, especially in summer and autumn, when fresh vegetables are abundant. The dish is truly great: it is very quick and easy to prepare, the recipe is not fussy (you can experiment with the amount and proportions of the ingredients as much as you like), and the flavor is very neutral and suitable for almost everyone. So I strongly recommend taking note of this recipe. Good luck. It can be served with tea or coffee.

First, thaw the sheets of puff pastry—just leave them at room temperature.

I had two sheets of puff pastry, so the question was how to join two sheets into one. It’s very simple: you only need to dampen the sheets on one side with water, then put those sides together. Press lightly with a rolling pin—and the dough sticks together.

Roll out our puff pastry into a thin sheet, put it into a baking dish, and shape small rims (1–2 cm). Prick the pastry with a fork in several places—and place it in the refrigerator.

Wash the broccoli thoroughly and cut it along the stem.

Break the cauliflower into florets.

Boil broccoli and cauliflower in salted water for just 5 minutes.

We treat the green beans and peas the same way — boil them for 5 minutes.

While the boiled vegetables drain, make the sauce. For this, mix grated cheese (two kinds), cream, eggs, and sour cream.

Salt and pepper our sauce, add nutmeg.

Cut the cherry tomatoes in half.

Take our dough out of the refrigerator and arrange the vegetables on it.

Dress the pie with the sauce. Place in an oven preheated to 180 degrees and bake for 40–45 minutes until cooked through.
