
Cauliflower Baked in the Oven
Description

The cauliflower comes out with a crispy cheese crust, beneath which lies tender cauliflower "soufflé." This dish can easily stand in for a light dinner. 1. Preheat the oven to 220°C. Break the cauliflower into florets, rinse, and pat dry. Line a baking sheet with parchment paper. Arrange the cauliflower on it and spray with vegetable oil. Bake for 10 minutes, then turn with a wooden spoon and bake for another 10–15 minutes until the florets are golden brown.

2. While the cauliflower is baking, prepare the sauce. In a saucepan, melt the butter, slowly whisk in the flour, then add salt and pepper. Whisk until smooth with no lumps. Cook for a few minutes until the sauce thickens.

3. Slowly pour the milk into the butter-and-flour sauce. Stir constantly. Do not bring to a boil!

4. Grate the yellow cheese on a grater. When the milk begins to bubble, add the cheese and stir. Reduce the heat to the lowest setting and stir until the cheese has melted.

5. Reduce the oven heat to 190 degrees. Select the baking sheet with the cauliflower. Prepare a non-stick baking dish. Place the florets in the dish.

6. Pour the prepared sauce (marinade) over the cauliflower.

7. Sprinkle the cauliflower, covered in cheese sauce, with grated Parmesan.

8. Place the baking dish with the cabbage in the oven for 20–30 minutes. When the dish is ready, the crust will be golden brown and the cheese will be bubbling.
