
Cauliflower with tomatoes
Description
The recipe doesn't take much time. I add cauliflower to soups, bake it in the oven, and turn it into a puree. But this dish is my absolute favorite. Thanks to the tomatoes and hard cheese, it slightly resembles Italian pizza. All my family members simply adore cauliflower with tomatoes cooked in a skillet! I prepare it often, especially when I don't have time to spend long on dinner or when there's no meat. So, for me, cauliflower with tomatoes is a real lifesaver. Prepare all the necessary ingredients. I use fresh cauliflower, but you can also use frozen cauliflower—the taste of the dish will not change much.

Separate the head of cauliflower into florets and slightly break them by hand.

Cut the tomatoes into small pieces.

Heat sunflower oil in a skillet until very hot, then add a handful of your favorite spices. Warm them until a rich aroma develops. Next, add the cauliflower and sauté until it turns slightly golden. Then add the tomatoes, season with salt, and cook over low heat until the tomatoes release their juice.

Once there is enough liquid in the pan, cover it with a lid and simmer for 20 minutes.

Grate the cheese on a coarse grater and sprinkle it over the cauliflower and tomatoes. Without stirring, cover with a lid and let it sit over low heat for 4-5 minutes, until the cheese melts.

The dish is ready. Place it on plates and serve immediately before the cheese hardens.
