
Cauliflower with cheese sauce
Description
The recipe won't take much time. Don't bake the cauliflower for too long—just long enough for the cheese to melt well and form a nice crust. That way, the cheese will be stretchy, and the cauliflower will remain tender and juicy with a nutmeg aroma. Watch carefully. Serve hot.

Prepare the ingredients. The amount of milk may differ slightly from mine, but more on that later. Let's begin.

Separate the cauliflower into florets. Bring water to a boil for cooking the cauliflower. Add salt. Boil the cauliflower until tender, about 5-7 minutes.

Grate the cheese on a coarse grater.

While the cabbage is cooking, prepare the sauce. Melt the butter in a skillet and sauté the flour in it until golden. Gradually add hot milk in small portions. Constantly stir with a spatula or whisk to prevent lumps from forming. Keep the heat at the lowest setting.

At the end of cooking the sauce, add a couple of pinches of pepper, salt, and nutmeg. Stir in half of the grated cheese. Mix well and cook over low heat until the sauce becomes smooth and the cheese is completely melted.

The sauce is ready. Remove it from the heat.

Transfer the cooked cauliflower to a convenient baking dish or container. There's no need to grease it; nothing will stick.

Pour the thick cheese sauce generously over the cabbage.

Sprinkle with the remaining half of the grated cheese. Place in a preheated oven for 10–12 minutes at 200 degrees.
