A homemade winter preserve. Cauliflower for winter in tomato sauce is a rare delicacy on our table. You can grate the tomatoes or chop them finely; as a last resort, use tomato juice or paste. You can also add more herbs—some people like cilantro or dill.     Divide the cauliflower into florets.
