
Tsvetaevsky pie with blueberries
Description
Perfect with tea and coffee. Tsvetaevsky pie is very easy to make, so even a beginner homemaker can handle it. The berries must be thoroughly dried so that excess moisture does not prevent the filling from thickening. Be sure to use high-quality sour cream, otherwise it may simply run instead of turning into a soufflé. Serve warm or chilled. Perfect with tea.

Prepare all the necessary ingredients for making a blueberry pie. Sort through the berries, rinse them, and dry them thoroughly.

Melt the butter in any convenient way and let it cool.

Add sour cream to the bowl with the butter. I also added 2 tbsp of sugar, since we like it sweeter, but it is not in the original.

Mix the flour with the baking powder and sift everything through a fine sieve into the bowl with the butter and sour cream.

Knead a soft, but not sticky dough.

Take a 26 cm springform pan, place the dough in it, and use your hands to spread it into a thin layer over the bottom and sides of the pan. You can line the bottom with baking paper to make it easier to remove the pie from the pan.

Sprinkle fresh blueberries over the dough and spread them evenly.

Crack the egg into a bowl, add sugar, and beat everything with a mixer until fluffy and the sugar dissolves.

Add sour cream to the bowl and gently mix everything together.

Add the starch and gently mix everything again until smooth.

Pour the resulting mixture over the blueberry layer. Gently shake the pan a little so the topping spreads more evenly.
