
Pumpkin candied fruit in a vegetable dehydrator

Prepare all the ingredients.

Peel the pumpkin, remove the seeds, and slice into 3-4 mm thick pieces.

Slice the lemon thinly.

Place the pumpkin and lemon in a saucepan in a single layer. Sprinkle a layer of sugar on top. Alternate the layers until all the ingredients are used. Let the pumpkin sit for 2–3 hours so it releases its juice.

When the sugar has completely dissolved, place the saucepan over medium heat and bring to a boil. Simmer for 5-6 minutes, then remove from the stove and let cool in the syrup.

Drain the pumpkin on a sieve and let the liquid drip off. Then arrange the pumpkin slices in a single layer on a dehydrator rack. You can also dry lemon slices. Dry the candied fruit at a temperature of 50-60 degrees for about 9-10 hours.
