
Candied Mandarin Oranges

So, making candied mandarin peel won't take much of your time; the lengthy part is waiting for them to steep and dry. Thoroughly wash the mandarin peels, place them in a small pot, pour in water (2 liters), and bring to a boil. Boil for ten minutes, then drain the water. Let the pot cool down, then put the mandarin peels back into it. Pour in fresh water and add a teaspoon of salt. The salt helps remove the bitterness from the peel. Bring to a boil again and cook for another ten minutes. Drain the water and transfer the peels to a colander. Once all the water has drained, cut the mandarin peels into thin strips. Pour one liter of water into a pot and dissolve sugar in it. Add the mandarin peels to the sweetened water and cook until the syrup has almost completely evaporated, about one hour. Near the end of cooking, add lemon acid to the pot and stir. Spread the nearly finished candied peels onto a baking sheet or a large cutting board. Let them dry for two to three hours. To speed up the process, you can place the board or tray on a radiator. Once ready, roll the candied mandarin peels in powdered sugar.
