Kiwi candied fruit

Description

The dish is prepared without unnecessary complications. To make candied fruits, I only need two main ingredients—fruit and sugar. You can also add a little lemon acid or juice. However, I don't add extra acid when making kiwi candied fruits, as they already contain enough. The kiwi fruits should be firm so they don't overcook during preparation. See all the details in my recipe. The finished dessert can be served at the table.

    Prepare the ingredients: kiwi, water, sugar. Let's get started!

    Wash the kiwi and peel it. Cut the fruit into slices 6-7 mm thick—don't make them too thin, since these are candied fruits, not chips.

    In a suitably sized saucepan, add the sugar and pour in the water. Bring to a boil and cook for 1 minute.

    Place the kiwi into the boiling syrup and cook over the lowest heat for about one minute. Remove from the stove and let it cool uncovered; do not cover with a lid.

    After a few hours, when the fruits have cooled well, use a slotted spoon to remove the kiwi and place it on a plate.

    Bring the syrup to a boil again, add the kiwi, cook for about a minute, then remove from heat and let cool in the syrup. Repeat this procedure two more times.

    When the kiwi in syrup have cooled for the last time, drain the slices onto a sieve and let the syrup drain off thoroughly, for about an hour. Use the syrup as needed; I made a fruit drink from it by adding water, sliced apples, and boiling for a couple of minutes.

    Line a baking sheet with parchment paper and arrange the kiwi slices on it. Dry in the oven at 90 degrees Celsius for 3-4 hours. I flip the slices after about an hour to speed up and even out the drying process.

    It is important not to overdry the kiwi candied fruit; when ready, they should not stick to your fingers, yet should be flexible.
