
Physalis candied fruits
Description
Unlike other candied fruits, candied ground cherries, in my opinion, are more interesting and unique. When finished, they somewhat resemble dried figs, but are sweeter and more tender. Usually, this sweet treat is eaten instead of candies, but you can also use the candied fruit when preparing various baked goods: cakes, buns, rolls, muffins, pies, etc. If you have a good ground cherry harvest and are wondering what to make from them, take a look at this recipe. Prepare all the ingredients.

Remove the husks from the cape gooseberries and thoroughly rinse them under running water. Then place them in a bowl and pour boiling water over them for a few seconds. Drain the boiling water, immediately pour cold water over the cape gooseberries, and then rinse them once again.

Combine water and sugar. Place over low heat and, stirring, let the sugar dissolve.

Place the prepared physalis into the hot syrup. I have large fruits, so I cut them in half, but if you have a smaller variety, it's enough to prick the physalis at the base with a toothpick.

Cook over low heat for about 5 minutes, then remove from the stove and let stand at room temperature for 5-6 hours. You can leave it overnight.

Then add citric acid and heat for another 5-7 minutes. Next, carefully drain the hot syrup and transfer the cape gooseberries to a colander. Let stand for 1.5–2 hours.

Select whole and attractive fruits and place them on a baking sheet. Cover them with parchment paper and dry well to make candied fruit. You can let the cape gooseberries dry at room temperature, or dry them in an oven at 35–40°C, or in an electric dehydrator. A small tip: if you're drying them naturally or in the oven, it's better to place the cape gooseberries on a silicone mat—this way you won't have trouble with the sticky candied fruits adhering to the surface, as they can sometimes stick quite firmly.

Delicious and healthy candied physalis are ready. Before storing them, dust them with powdered sugar. These candied fruits store well in a regular cardboard box.
