
Watermelon rind candied fruit
Description
The dish is prepared without unnecessary complications. Candied fruit is not only a delicious treat but also a great decoration for desserts. With this recipe, you can make candied watermelon rinds, which turn out to be semi-transparent, slightly dried, and very tasty. Using the same method, you can make candied fruit from many other fruits, but since watermelon is naturally quite sweet, I recommend using it. Dust the finished candied fruit with powdered sugar to prevent them from sticking together during storage. Serve the ready dessert.

1. Place the watermelon rinds in a saucepan and sprinkle them with sugar. Leave them at room temperature for 12 hours so the rinds release their juice. Put the saucepan over heat and boil for 10 minutes.

2. Cool the candied fruit at room temperature and remove them from the syrup. Add citric acid to the syrup and place on the stove for 15 minutes. Add the watermelon rinds and continue cooking for 15–20 minutes.

3. Cool the candied fruits at room temperature. Place the candied fruits on a baking sheet lined with parchment paper and dry for 1 hour at 100 degrees with the oven door open.

4. Place the candied fruits on the table and dry at room temperature for several days. Once ready, coat the candied fruits with powdered sugar and store in a jar.
