Making candied fruit is a simple process, although it does require time. It is very important to drain the syrup thoroughly from the fruit slices, as excess moisture will hinder the drying of the candied fruit. Follow the recipe carefully, and the result will pleasantly delight you.

    Pour water into a large saucepan, add sugar. Place over medium heat and cook the syrup.

    Wash the quince. If the fruit has a fuzzy surface, scrub it thoroughly with a brush. Cut it in half and remove the core with seeds. Slice into pieces 0.8–1 cm thick.

    Transfer the sliced quince into a saucepan with the hot sugar syrup. Return to heat. Bring to a boil. Stir and remove from heat.

    Cover the pot with a lid. Leave at room temperature for 24 hours.

    After resting, the quince slices will shrink slightly and sink to the bottom of the pot. Place the pot with quince on the stove, turn on medium heat, and cook for 15 minutes from the moment it begins to boil. It should not boil vigorously.

After the time has elapsed, drain the quince in a colander and let it sit for a while to allow the syrup to drip off, then arrange the slices on the prepared surface. Place the quince slices a certain distance apart from each other. Put the tray with the future candied fruit in a warm, well-ventilated place for 2-4 days.
