Trim the wing tips of the chicken, cut it lengthwise along the breast, then press firmly with your palm to flatten it. Pound the chicken, focusing mainly on the joints, but be careful not to break the bones. The main goal is to make the chicken flatter.

In a bowl, mix 1 tablespoon of vegetable oil, khmeli-suneli, pepper, 1 teaspoon of salt (without a heap), and the juice of half a lemon.
