Description

The appetizer is quick and easy to prepare. Chushka byurek is practically an iconic Bulgarian dish, as it is eaten in modern Bulgaria with remarkable regularity and great pleasure. As far as I know, this dish migrated to Bulgaria from Turkey. Today, Turks have never heard of such an appetizer, whereas Bulgarians serve this hot appetizer regularly. Well, our culinary tastes largely coincide with the Bulgarian ones, so let's try making chushka byurek at home. Serve the appetizer at the table.

    Wash the peppers and place them on a lightly greased baking dish.

    Bake the peppers for about 15 minutes at 180°C. Only then remove the seeds and inner parts, and peel off the skin.

    Mash the brynza with a fork.

    Break an egg into the brined cheese and add herbs. I also added finely chopped tomatoes—but that’s optional, so I didn’t include tomatoes in the ingredient list. That’s my own improvisation; the original recipe doesn’t call for tomatoes.

    Mix everything thoroughly. You’ll end up with a beautiful filling like this.

    Stuff our peppers with the prepared filling.

    Coat the peppers in flour, beaten egg, and breadcrumbs, then fry over medium heat on both sides until golden brown.

    Done! The appetizer is best eaten hot, but it can also be served cold.
