Description
It works for both special occasions and everyday meals. You can make a delicious dish even from freshly caught sturgeon—for example, nonsense! This appetizer is perfect for get-togethers with friends or family over a shot of vodka or a glass of wine. For the fish to marinate thoroughly, it’s best to leave it in the refrigerator for 24 hours. The appetizer is ready. Serve immediately.

Prepare the listed ingredients. Rinse the fish in advance, gut it, and scald with boiling water.

Rinse the sterlet and remove the backbone, head, fins, and tail. Cut into slices no more than 2 cm thick.

Peel the onion and garlic, rinse them in water. Slice the onion into half-rings, mince the garlic, and add both to the container with the fish.

Cut the lemon into slices and place in a container.

Pour in the vinegar, salt and pepper the entire mixture. Be sure to add vinegar so there is plenty of marinade. Since the fish stews in it for only a short time, there must be enough acid.

Rinse and chop the parsley, add it to the container, and mix everything together. Place the dish in the refrigerator for 1–2 hours, stirring it from time to time.
