
Chudu with spinach
Description
The baked goods come together simply and quickly. The dough is very easy to make from a minimal set of ingredients. Besides spinach, we use cottage cheese and green onion for the filling, and egg to bind everything together. You can shape the flatbreads round or as half-moons. The important part is to seal the edges of the dough well so the filling doesn’t leak and all the juices stay inside—then the chudu will be very juicy. Serve warm or chilled. Ideal with tea.

Prepare all ingredients.

Sift the flour through a sieve, pour it into a deep bowl, make a well in the centre, pour in warm water, and add salt.

Knead a thick, soft dough by hand until it no longer sticks to your palms. Cover the dough with a towel and leave it on the table; meanwhile, prepare the filling.

Rinse the spinach and green onions and pat dry. Finely chop the spinach leaves and slice the onion into rings. Add grainy cottage cheese to the greens, crack in one egg, and add ground black pepper and salt.

Mix thoroughly so the egg coats all the ingredients.

Divide the main ball of dough into equal pieces of about 100 g each, and roll them into balls.

Lightly dust the board with flour. Roll each ball out with a rolling pin into a round sheet as thin as possible.

On one side of the circle, arrange several spoonfuls of spinach filling.

Cover the filling with the second side of the same sheet. Pinch the edges firmly with your hands so they don’t come apart. Trim any unevenness with a special dough knife. Repeat all these steps with the remaining pieces of dough, using all of the filling.

Heat the skillet and set the heat to medium. Place the portions on the dry skillet surface and fry them one after the other on both sides until a golden crust forms. Cover the skillet with a lid.

After frying, generously brush both sides of the warm chudu with butter and serve.
