
Cheese-filled chudu
Description
Homemade baked goods for tea. You can prepare the filling without potatoes—it will be just as delicious. But I must admit, it was precisely this unusual combination of cottage cheese with potatoes that made me want to try this dish. And now I can tell you that I only make chudu this way! Don't skimp on the herbs. Cilantro, dill, and parsley are perfect for this dish. Generously sprinkle the chudu with fresh herbs, and if you like, you can also add some to the filling.

1. Make a smooth dough from flour, water, and salt, without lumps. The key is to knead it well. The dough should be slightly sticky to the hands, yet fairly firm.

2. For the filling, sauté chopped onion in vegetable oil. Boil and peel the potatoes, then mash them into a puree. Now combine the cottage cheese, potato puree, and onion, along with salt and spices to taste.

3. Now shape the dough into identical flatbreads, place a ball of filling in the center of each, and form little dumplings with a twisted tail curled upwards, like manty.

4. Now simply roll over the top with a rolling pin to flatten the balls into pancakes, and fry each pancake on both sides on a hot skillet.

5. Stack the chudu in a pile, sprinkle with herbs, and serve! It's best to serve them slightly warm.
